When, as a farmer, I look at the amazing unleashing of natural development and power, when a seed sprouts, I can only conclude that I'd like some of that energy!
Just think about it for a moment. From a tiny seed emanates a huge plant. At its most extreme, think of the little wafer like seed of the giant redwood tree, and look what that can generate. Think of an acorn, and then ponder how it turns into this massive rambling oak tree, which in turn hosts up to 1,000 different species. All from that one tiny little acorn. Of course, think of our own human seed, look at the complexity of the organism that that creates. Phenomenal.
So, doesn't it make sense that we would want to eat the same kind of plant at its most vigourous stage of growth, and harness that youthful energy and nutrition? Why would we want to wait until it's senescing, and eat the older tissue?

You'll see that they're using the sprouted seeds to feed their racehorses. There is an animal that needs to have the best of nutrition, if it is to have any chance of success on the racetrack. They've worked it out, and so can you! Get yourself plenty of young, vibrant food, or juices, and fuel yourself with the best. Don't compromise what is a finely tuned machine, otherwise known as our body.
